Chicken Chettinad is a spicy and flavorful chicken dish that originated in the Chettinad region of Tamil Nadu, India. It is known for its bold flavors and the use of aromatic spices.

Ingredients:

For marination:

  • 500 grams boneless chicken, cut into small pieces
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon salt
  • 2 tablespoons yogurt
For the gravy:
  • 3 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 bay leaves
  • 1 cinnamon stick
  • 4 cloves
  • 4 cardamom pods
  • 1 onion, finely chopped
  • 2 teaspoons ginger garlic paste
  • 2 green chilies, slit
  • 1 tomato, chopped
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 2 teaspoons coriander powder
  • 2 teaspoons cumin powder
  • 2 teaspoons garam masala powder
  • Salt to taste
  • 1/2 cup water
  • Curry leaves
  • Chopped coriander leaves
Instructions:
  1. In a bowl, mix together the chicken pieces, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala powder, salt, and yogurt. Let it marinate for at least 30 minutes.
  2. Heat oil in a pan and add mustard seeds and cumin seeds. When they start to splutter, add bay leaves, cinnamon stick, cloves, and cardamom pods.
  3. Add the chopped onions and sauté until they turn translucent.
  4. Add ginger garlic paste and green chilies. Sauté for a minute.
  5. Add the chopped tomatoes and cook until they turn soft and mushy.
  6. Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well.
  7. Add the marinated chicken and mix well. Cook for 5 minutes.
  8. Add water and curry leaves. Mix well and bring it to a boil.
  9. Reduce the heat and let it simmer for 20-25 minutes or until the chicken is cooked and the gravy has thickened.
  10. Garnish with chopped coriander leaves and serve hot with rice or roti.
