Instructions:
- To make the filling, combine the grated coconut and jaggery in a non-stick pan and cook over low heat until the jaggery melts and the mixture becomes sticky.
- Add the cardamom powder and mix well. Keep aside to cool.
- To make the dough, bring water to a boil in a heavy-bottomed pan.
- Add the oil and salt to the water and stir well.
- Lower the heat and add the rice flour to the pan, stirring constantly to avoid lumps.
- Mix well until the flour is cooked and the mixture comes together to form a smooth dough.
- Remove from heat and transfer the dough to a plate.
- Knead the dough while it is still hot until it is smooth and pliable.
- Divide the dough into small lemon-sized balls.
- Grease your palms with a little oil and flatten each ball to form a cup-like shape.
- Place a small amount of the filling in the center of each cup.
- Carefully bring the edges of the cup together to form a closed dumpling, pinching the edges to seal.
- Repeat the process with the remaining dough and filling.
- Steam the dumplings in a steamer for 15-20 minutes or until cooked.
- Serve the Ukadiche Modak hot or at room temperature.
