Ingredients:
For the filling:
  • 2 cups grated fresh coconut
  • 1 cup jaggery, grated or powdered
  • 1 tsp cardamom powder
For the dough:
  • 2 cups rice flour
  • 2 cups water
  • 1 tsp oil
  • A pinch of salt
Instructions:
  1. To make the filling, combine the grated coconut and jaggery in a non-stick pan and cook over low heat until the jaggery melts and the mixture becomes sticky.
  2. Add the cardamom powder and mix well. Keep aside to cool.
  3. To make the dough, bring water to a boil in a heavy-bottomed pan.
  4. Add the oil and salt to the water and stir well.
  5. Lower the heat and add the rice flour to the pan, stirring constantly to avoid lumps.
  6. Mix well until the flour is cooked and the mixture comes together to form a smooth dough.
  7. Remove from heat and transfer the dough to a plate.
  8. Knead the dough while it is still hot until it is smooth and pliable.
  9. Divide the dough into small lemon-sized balls.
  10. Grease your palms with a little oil and flatten each ball to form a cup-like shape.
  11. Place a small amount of the filling in the center of each cup.
  12. Carefully bring the edges of the cup together to form a closed dumpling, pinching the edges to seal.
  13. Repeat the process with the remaining dough and filling.
  14. Steam the dumplings in a steamer for 15-20 minutes or until cooked.
  15. Serve the Ukadiche Modak hot or at room temperature.
